Easy Shrimp Scampi Pasta for Date Night

Ingredients

  • 4 garlic cloves
  • 1 lb shrimp
  • 2 tsp chili flakes
  • Juice of 1 lemon
  • 1/2 cup parsley
  • 1/2 cup white wine or broth
  • 3 tbsp vegan butter or butter
  • 1 lb spaghetti or linguini
  • 2 tbsp olive oil
  • Salt
  • Pepper

Preparation

  1. Have all ingredients chopped, juiced, and ready to go as the dish cooks quickly.

  2. Cook spaghetti or linguini until al dente and reserve 1/4 cup pasta water.

  3. Sauté minced garlic and chili flakes in 2 tbsp olive oil and 2 tbsp butter or vegan butter, stirring often to avoid burning the garlic.

  4. Pat dry shrimp and season with salt and pepper.

  5. Add shrimp and fry for 2 minutes per side, then remove and set aside.

  6. Add 1/2 cup white wine or broth and lemon juice, bring to a simmer.

  7. Stir in 1 more tbsp butter or vegan butter.

  8. Lower heat, return shrimp, add diced parsley and cooked noodles.

  9. Stir quickly with tongs and add reserved pasta water until desired consistency is reached.

  10. Serve with cracked black pepper, extra chili flakes, and parsley, along with chilled white wine and crusty garlic bread.
