Easy Spring Salmon Pasta with Lemon and Parmesan
Ingredients
Salmon
- 1 lb salmon
- Olive oil
- 1 tsp garlic powder
- 1 tsp parsley
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 tsp lemon zest
Other
- 1 cup chopped kale
Pasta
- 10 oz gluten-free pasta
- 1 tbsp olive oil
- 2 tbsp butter
- 2 tsp garlic powder
- 1/3 cup lemon juice
- 1 tbsp lemon zest
- 1/4 cup chopped parsley
- 1/2 cup Parmesan cheese
- salt and pepper to taste
- red pepper flakes to taste
Preparation
Heat a pan over medium heat.
Cut the salmon into bites.
Add the salmon to a bowl.
Add 1 tablespoon olive oil.
Add the spices.
Coat the salmon with the spices.
Add the salmon to a pan with olive oil.
Cook for about 6 minutes total, flipping the salmon 2-3 times.
While the salmon cooks, cook pasta al dente and save 1/4 cup of pasta water before straining it.
When the salmon is almost done, add kale.
Cook for 2-3 minutes.
Add cooked pasta.
Add garlic powder, pasta water, lemon juice and zest, butter, parsley, and cheese.
Stir to combine.
Cook until pasta is warm.
Season with salt, pepper, and red pepper flakes.
Serve and enjoy.
