Mediterranean Salmon Rice Bowl
Ingredients
- Salmon
- garlic powder
- lemon
- mixed dried herbs
- paprika
- olive oil
- salt
- pepper
- 125g wholegrain rice
- fresh spinach
- mint and parsley (handful)
- extra virgin olive oil
- lemon juice
- sea salt (pinch)
- tzatziki
- green chillies
Preparation
Marinate the salmon in garlic powder, lemon, mixed dried herbs, paprika, olive oil, salt, and pepper.
Airfry the marinated salmon for 8 minutes.
Cook the wholegrain rice according to package instructions.
Finely chop the fresh spinach, mint, and parsley.
Toss the cooked rice with the chopped spinach, herbs, extra virgin olive oil, lemon juice, and a pinch of sea salt to prepare the rice salad.
Serve the airfried salmon over the warm rice salad and top with tzatziki and green chillies.
