Mussels and Shrimp Spaghetti

Ingredients

  • 4 garlic cloves
  • 1/2 lb shrimp
  • 1/2 lb mussels
  • 3 tsp chili flakes
  • Juice of 1 lemon
  • 1/2 cup parsley
  • 1/2 cup dry white wine or broth
  • 3 tbsp vegan butter or butter
  • 1 lb spaghetti or linguini

Preparation

  1. Cook spaghetti until al dente and reserve a little pasta water.

  2. Sauté minced garlic and chili flakes in oil and butter, stirring often.

  3. Pat dry shrimp, sprinkle with salt and pepper, add to pan and cook 2 minutes per side.

  4. Remove shrimp and set aside.

  5. Add 1/2 cup dry white wine or broth, lemon juice, and mussels.

  6. Cover the pan with a lid and let cook for 5 minutes or until all mussels have opened.

  7. Return shrimp to the pan and add parsley.

  8. Remove from heat and stir in spaghetti and a little reserved pasta water.

Tips

  1. Enjoy with extra chili flakes and parsley, and some crusty bread to soak up the sauce.
