Mussels and Shrimp Spaghetti
Ingredients
- 4 garlic cloves
- 1/2 lb shrimp
- 1/2 lb mussels
- 3 tsp chili flakes
- Juice of 1 lemon
- 1/2 cup parsley
- 1/2 cup dry white wine or broth
- 3 tbsp vegan butter or butter
- 1 lb spaghetti or linguini
Preparation
Cook spaghetti until al dente and reserve a little pasta water.
Sauté minced garlic and chili flakes in oil and butter, stirring often.
Pat dry shrimp, sprinkle with salt and pepper, add to pan and cook 2 minutes per side.
Remove shrimp and set aside.
Add 1/2 cup dry white wine or broth, lemon juice, and mussels.
Cover the pan with a lid and let cook for 5 minutes or until all mussels have opened.
Return shrimp to the pan and add parsley.
Remove from heat and stir in spaghetti and a little reserved pasta water.
Tips
Enjoy with extra chili flakes and parsley, and some crusty bread to soak up the sauce.
