Pasta with Tomato Cream Sauce
Ingredients
- 300g pasta
- 2 tablespoons olive oil
- 1 small onion
- 1-2 garlic cloves
- 2 tablespoons butter
- 3-4 tablespoons tomato paste
- 200ml cream
- Salt and pepper to taste

- Fresh basil
- Parmesan cheese
Preparation
Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain, reserving about 100ml of pasta water.
While the pasta is cooking, heat olive oil in a pan. Sauté the onion over medium heat until translucent for about 3-4 minutes, then add garlic and cook briefly without letting it brown too much.
Add butter to the pan and let it melt, then stir in tomato paste and lightly roast for about 2 minutes.
Deglaze with cream, stir well, and simmer over low heat for about 5 minutes. If the sauce is too thick, stir in some pasta water.
Season with salt and pepper to taste. Optionally, add finely chopped fresh basil.
Add the pasta directly to the pan with the sauce and mix well. If necessary, add more pasta water.
Serve with Parmesan cheese.
