Quick Sriracha Tahini Noodles

Ingredients

Sauce

  • 1/2 cup tahini
  • 1/4 cup soy sauce
  • juice from 1 lime
  • 1–2 tbsp sriracha
  • 1 tbsp maple syrup
  • 1/4 tsp grated ginger
  • 1 garlic clove
  • 1/4 cup water

Veggies

  • 2–3 cups veggies of choice, e.g., 1 zucchini and 1 carrot

Noodles and toppings

  • 1 pack cooked noodles of choice
  • Optional: scallions or scapes, hemp seeds

Preparation

  1. Add all sauce ingredients to a blender and blend until smooth. Set aside.

  2. Heat sesame oil in a skillet over medium heat. Add veggies and cook until softened.

  3. Mix sauce with noodles and veggies.

Notes

  1. This recipe is ready in 15 minutes and is perfect for a quick weeknight meal.
