Quinoa and Veggie Collard Wraps
Ingredients
- 4 collard leaves
- 1/2 cup hummus (any variety)
- 1 cup cooked quinoa
- 1 medium cucumber
- 1 medium tomato
- 2 carrots , grated
- 1 avocado , sliced
- 1/2 cup sprouts
Preparation
Wash and trim the stems of the collard leaves to make them easier to roll.
Slice the cucumber, tomato, and avocado into thin pieces.
Grate the carrots if not already done.
Spread a layer of hummus evenly over each collard leaf.
Add a portion of cooked quinoa, sliced vegetables, grated carrots, and sprouts to the center of each leaf.
Roll up the collard leaves tightly to enclose the fillings.
Serve the wraps immediately or refrigerate for meal prep.
