Rice with Vegetables and Sumac
Ingredients
- 1 courgette @riverford
- 1 cup of steamed broccoli @brookgreen_mk
- 1 cup of steamed carrots @brookgreen_mk
- 2 cups of cooked brown rice @getloosefoods
- 1 Tbs of olive oil
- 1/2 tsp of salt
- Pepper
- 2 tsp of sumach @steenbergsltd
Preparation
Cooked, cooled and refrigerated rice is easier to digest than fresh rice.
Slice the courgette into circles and cook it in olive oil for about 3-4 minutes.
Add the rice, salt and pepper and cook together for 2-3 minutes, stirring.
Add the steamed vegetables and gently stir while cooking for further 2-3 minutes.
Add the sumach just before serving.
Sumach is amazing! It works wonderful with rice and adds lovely tart flavour to the dish.
