Rice with Vegetables and Sumac

Ingredients

  • 1 courgette @riverford
  • 1 cup of steamed broccoli @brookgreen_mk
  • 1 cup of steamed carrots @brookgreen_mk
  • 2 cups of cooked brown rice @getloosefoods
  • 1 Tbs of olive oil
  • 1/2 tsp of salt
  • Pepper
  • 2 tsp of sumach @steenbergsltd

Preparation

  1. Cooked, cooled and refrigerated rice is easier to digest than fresh rice.

  2. Slice the courgette into circles and cook it in olive oil for about 3-4 minutes.

  3. Add the rice, salt and pepper and cook together for 2-3 minutes, stirring.

  4. Add the steamed vegetables and gently stir while cooking for further 2-3 minutes.

  5. Add the sumach just before serving.

  6. Sumach is amazing! It works wonderful with rice and adds lovely tart flavour to the dish.
