Roasted Kabocha Squash and Green Salad
Ingredients
- kabocha squash
- frozen broccoli
- frozen edamame
- cucumbers
- hemp seeds
- pepitas
- greens
Dressing
- 1 tbsp tahini
- 2 tsp sweet chili sauce
- 1 tsp soy sauce
- 1 tsp apple cider vinegar
- 1 tbsp water
Preparation
Roast the kabocha squash and frozen broccoli.
Add frozen edamame, cucumbers, hemp seeds, and pepitas on top of the greens.
For the dressing, combine 1 tbsp tahini, 2 tsp sweet chili sauce, 1 tsp soy sauce, and 1 tsp apple cider vinegar.
Whisk the dressing together and add 1 tbsp water to thin it out.
