Roasted Kabocha Squash and Green Salad

Ingredients

  • kabocha squash
  • frozen broccoli
  • frozen edamame
  • cucumbers
  • hemp seeds
  • pepitas
  • greens

Dressing

  • 1 tbsp tahini
  • 2 tsp sweet chili sauce
  • 1 tsp soy sauce
  • 1 tsp apple cider vinegar
  • 1 tbsp water

Preparation

  1. Roast the kabocha squash and frozen broccoli.

  2. Add frozen edamame, cucumbers, hemp seeds, and pepitas on top of the greens.

  3. For the dressing, combine 1 tbsp tahini, 2 tsp sweet chili sauce, 1 tsp soy sauce, and 1 tsp apple cider vinegar.

  4. Whisk the dressing together and add 1 tbsp water to thin it out.
