Simple Baked Avocado Egg Boats for Breakfast
Ingredients
- 1 avocado
- 1 egg
- salt and pepper to taste
- coriander or preferred herb
Preparation
Cut an avocado in half and remove the stone.
Scoop a little avocado from the center to make a cavity for the egg.
Break an egg into the center.
Season with salt and pepper.
Add a herb, such as coriander.
Bake in the oven for about 8 minutes or until desired egg consistency.
