Sweet and Sour Tofu

Ingredients

  • 1 package extra firm tofu, drained
  • 2 tbsp low sodium soy sauce
  • 1 tbsp rice wine vinegar
  • 2 tsp maple syrup
  • 2 tsp ketchup
  • 3 cloves garlic, minced
  • 1/2 inch ginger, minced
  • 2 tbsp water
  • 1/4 tsp corn starch

Preparation

  1. Set oven to 400F

  2. In a bowl combine all ingredients except tofu and whisk to combine then set aside

  3. Cut tofu into desired shapes and pat dry with a paper towel

  4. Place tofu on a baking tray and bake for 15-20 minutes to remove moisture

  5. Remove from oven

  6. In a sauté pan add garlic and ginger and sauté until fragrant

  7. Add sauce and then tofu

  8. Stir to coat and cook allowing sauce to thicken
