Thai-Inspired Pad See Ew Stir-Fry
Ingredients
- 8 oz rice noodles
- Firm tofu
- Broccoli
- 2 cups cole slaw mix (shredded cabbage and carrots)
- 2 tsp avocado oil
Sauce
- 2 Tbsp dark soy sauce
- 2 Tbsp lime juice
- 2 tsp unseasoned rice vinegar
- 1 Tbsp maple syrup
- 3 Tbsp water
- 2 tsp corn starch
- 1 tsp garlic powder
Preparation
Soak the rice noodles in hot water for 15 minutes while preparing other ingredients.
Mix the sauce ingredients together until the corn starch is dissolved, then set aside.
Heat a pan and add 1 tsp avocado oil.
Sauté the broccoli and firm tofu for 3 to 5 minutes.
Make a well in the middle of the pan and add another tsp of avocado oil.
Add the drained noodles and cole slaw mix, then pour in the sauce after stirring it.
Mix everything using tongs or a spoon and cook for 5 minutes, flipping occasionally, until the noodles are soft.
Tips
Experiment with additional vegetables like zucchini or add Sriracha for heat.
Adjust the amount of vegetables and protein based on preference for a more noodle-focused or veggie-heavy dish.
