Vegan Pulled Jackfruit Sandwich

Ingredients

  • 1 tinned jackfruit, drained and washed
  • 1 onion, thinly sliced
  • 1 tablespoon tomato paste
  • 1 bay leaf
  • 2 teaspoons cumin powder
  • 3 teaspoons smoked paprika
  • 1 tablespoon mixed dried herbs
  • 1/2 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon xylitol
  • salt to taste
  • 1 tablespoon vegan butter

Preparation

  1. Heat olive oil in a pan and when hot add bay leaf, onions, xylitol and lemon. Cook till onions are caramelised

  2. Add tomato paste, cumin powder and smoked paprika. Cook for a further 5-6 minutes

  3. Add jackfruit and herbs and mix well to combine

  4. Stir in vegan butter and salt. Cook on a low flame with lid on for further 20-25 minutes till jackfruit is soft and melt in the mouth

  5. Eat on its own or in a sandwich. Enjoy!
