White Chocolate Magic Layer Cake
Ingredients
- 150 g white chocolate
- 6 medium eggs
- 150 g cream cheese
- 1 teaspoon vanilla extract
- a pinch of salt
- powdered sugar, for dusting
- butter, for greasing the pan
Preparation
Preheat the oven to 180°C (350°F)
Grease a 20 cm springform pan with butter and set aside
Chop the white chocolate and melt over a hot water bath; let cool
Separate the eggs
Mix the cream cheese, egg yolks, melted chocolate, and vanilla extract until smooth
Beat the egg whites and salt until stiff peaks form
Gently fold the egg whites into the cheese mixture, leaving a few streaks of egg white
Pour the batter into the prepared pan
Bake for 15 minutes at 180°C (350°F)
Reduce the oven temperature to 150°C (300°F) and bake for another 20 minutes until golden brown
Let the cake cool in the oven with the door slightly ajar
Remove from the pan, dust with powdered sugar, and serve
Notes
Leaving visible streaks of egg white ensures proper layer separation during baking
The cake serves about 10 people
