Zucchini and Zucchini Flower Tempura
Ingredients
- 1 zucchini
- A few zucchini flowers
- 5 tablespoons all-purpose flour
- 3 tablespoons rice flour
- 2 tablespoons cornstarch
- 5 tablespoons sparkling water
- 1 ice cube
- 1 pinch salt
Preparation
Heat oil in a pan, pot, or fryer.
In a bowl, mix the flours, cornstarch, and salt, then add the sparkling water and whisk to combine.
Add the ice cube and stir as it melts.
Dip the zucchini slices one by one into the batter and place in the hot oil. Do not overcrowd the pan to avoid cooling the oil. When golden brown on both sides, remove and place on a rack with paper towels.
Sprinkle with fleur de sel and eat immediately.
If not eating immediately, keep warm in a 110°C oven for about 10 minutes.
Tips
Rice flour and ice cube are important for achieving crispiness.
