Basic Brazilian Snack Dough

Ingredients

  • 3 cups all-purpose flour
  • 2 cups milk
  • 1 cup chicken broth (cooking water or Knorr broth)
  • 3 tablespoons margarine
  • 2 tablespoons finely chopped parsley
  • Salt to taste
  • Paprika or tomato paste

Preparation

  1. In a saucepan, combine milk, chicken broth, margarine, parsley, and paprika or tomato paste

  2. Heat over low heat until the margarine melts

  3. Stir and check if more salt is needed

  4. Keep over low heat and, when it comes to a boil, add the flour and stir well with a wooden spoon until the dough pulls away from the bottom of the pan

  5. Continue stirring for a little longer

  6. Place the dough on a cold surface to work with

  7. Wait until it cools slightly and divide into 4 pieces

  8. Knead the dough before it cools completely

  1. This prevents the snacks from cracking when frying
