Wonderful Brazilian Corn Fritters

Ingredients

  • 4 ears of corn
  • 1 egg
  • 1 tablespoon corn starch
  • Approximately 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • Salt and black pepper to taste
  • Chopped fresh cilantro and scallions
  • Oil for frying

Preparation

  1. Blend the corn and egg in a blender until smooth

  2. Pour the mixture into a large bowl

  3. Stir in the salt, black pepper, and chopped cilantro and scallions

  4. Gradually add the corn starch and flour, mixing until just combined; you may not need all the flour

  5. Gently fold in the baking powder

  6. Heat oil in a deep skillet or large pot over medium-high heat

  7. Drop spoonfuls of the batter into the hot oil and fry until golden brown on all sides

  8. Remove with a slotted spoon and drain on paper towels

Tips

  1. You can use canned corn instead of fresh ears; if using canned corn, do not use the liquid
