Wonderful Brazilian Corn Fritters
Ingredients
- 4 ears of corn
- 1 egg
- 1 tablespoon corn starch
- Approximately 1 cup all-purpose flour
- 1 teaspoon baking powder
- Salt and black pepper to taste
- Chopped fresh cilantro and scallions
- Oil for frying
Preparation
Blend the corn and egg in a blender until smooth
Pour the mixture into a large bowl
Stir in the salt, black pepper, and chopped cilantro and scallions
Gradually add the corn starch and flour, mixing until just combined; you may not need all the flour
Gently fold in the baking powder
Heat oil in a deep skillet or large pot over medium-high heat
Drop spoonfuls of the batter into the hot oil and fry until golden brown on all sides
Remove with a slotted spoon and drain on paper towels
Tips
You can use canned corn instead of fresh ears; if using canned corn, do not use the liquid
