15-Minute White Bean Quesadillas

Ingredients

Tartinade

  • 400g cooked white beans
  • 1 chili pepper
  • 1/2 bell pepper
  • 2 garlic cloves
  • 90g cherry tomatoes
  • a bunch of parsley, mint, or cilantro
  • 2 teaspoons cumin
  • 1/2 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • salt and pepper
  • a handful of arugula or other peppery greens

Quesadilla components

  • 8 tortillas
  • leftover cooked rice
  • grated vegan cheese
  • yogurt
  • lime juice
  • oil for frying
  • and other desired toppings

Preparation

  1. Put all the tartinade ingredients in a blender and pulse several times until it can be spread but not completely smooth.

  2. Heat a skillet with a little oil.

  3. Meanwhile, spread the tartinade on a tortilla then add the cooked rice, grated vegan cheese, and any other desired toppings.

  4. Place another tortilla on top and put in the skillet.

  5. Cook for a few minutes on each side until done. It's ready!
