15-Minute White Bean Quesadillas
Ingredients
Tartinade
- 400g cooked white beans
- 1 chili pepper
- 1/2 bell pepper
- 2 garlic cloves
- 90g cherry tomatoes
- a bunch of parsley, mint, or cilantro
- 2 teaspoons cumin
- 1/2 teaspoon ground coriander
- 1 teaspoon smoked paprika
- salt and pepper
- a handful of arugula or other peppery greens
Quesadilla components
- 8 tortillas
- leftover cooked rice
- grated vegan cheese
- yogurt
- lime juice
- oil for frying
- and other desired toppings
Preparation
Put all the tartinade ingredients in a blender and pulse several times until it can be spread but not completely smooth.
Heat a skillet with a little oil.
Meanwhile, spread the tartinade on a tortilla then add the cooked rice, grated vegan cheese, and any other desired toppings.
Place another tortilla on top and put in the skillet.
Cook for a few minutes on each side until done. It's ready!
