Easy 15-Minute Vegan Quesadillas
Ingredients
Tartinade
- 400g cooked white beans (or any other canned legume)
- 1 chili pepper
- 1/2 bell pepper
- 2 garlic cloves
- 90g cherry tomatoes
- a bunch of parsley, mint, or cilantro
- 2 teaspoons cumin
- 1/2 teaspoon ground coriander
- 1 teaspoon smoked paprika
- salt and pepper
- a handful of arugula or other peppery salad green
Fillings
- 8 tortillas
- cooked rice leftovers
- grated vegan cheese
- yogurt
- lime juice
- and any other desired toppings
Preparation
Put all the tartinade ingredients in a blender and pulse several times until it is spreadable but not completely smooth.
Heat a pan with a little oil.
Meanwhile, spread the tartinade on a tortilla then add the cooked rice, grated vegan cheese, and any other toppings.
Place another tortilla on top and put it in the pan.
Cook for a few minutes on each side. It's ready!
Notes
This recipe can be prepared in 15 minutes including cooking time.
The quesadillas are spicy, soft, and crispy on the edges.
