Easy 15-Minute Vegan Quesadillas

Ingredients

Tartinade

  • 400g cooked white beans (or any other canned legume)
  • 1 chili pepper
  • 1/2 bell pepper
  • 2 garlic cloves
  • 90g cherry tomatoes
  • a bunch of parsley, mint, or cilantro
  • 2 teaspoons cumin
  • 1/2 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • salt and pepper
  • a handful of arugula or other peppery salad green

Fillings

  • 8 tortillas
  • cooked rice leftovers
  • grated vegan cheese
  • yogurt
  • lime juice
  • and any other desired toppings

Preparation

  1. Put all the tartinade ingredients in a blender and pulse several times until it is spreadable but not completely smooth.

  2. Heat a pan with a little oil.

  3. Meanwhile, spread the tartinade on a tortilla then add the cooked rice, grated vegan cheese, and any other toppings.

  4. Place another tortilla on top and put it in the pan.

  5. Cook for a few minutes on each side. It's ready!

Notes

  1. This recipe can be prepared in 15 minutes including cooking time.

  2. The quesadillas are spicy, soft, and crispy on the edges.
