Lion's Mane Mushroom Steak Gyros
Ingredients
- 1 lions mane mushroom
- 1 tomato
- Pickled onions
- Coriander
- Hot sauce
- Pita bread
Steak marinade
- 2 tbsp beetroot juice
- 1 tsp garlic powder
- 1 tbsp soy sauce
- 1 tsp onion powder
- 1 tbsp smoked paprika
- Salt and pepper
- 2 tbsp olive oil
Tzatziki
- 4 tbsp vegan Greek yoghurt
- Half a cucumber
- Handful of mint
- 1 garlic clove
- Glug of olive oil
- Juice of half a lemon
- Salt
Preparation
Drizzle oil and salt in a skillet and add the mushroom to heat it up, spreading it around and resting another pan on top without pressing.
Remove the pan, move the mushroom around, and repeat the process, then flip and sear the other side until it resembles a steak shape.
Mix the steak marinade ingredients in a container, coat the mushroom thoroughly, and refrigerate.
Prepare the tzatziki by mixing its ingredients, pickle the onions, and chop the tomato.
Remove the mushroom from the fridge, add more oil to the skillet, and fry it again for 3-4 minutes per side until charred, or use a BBQ.
Heat the pita bread, spread tzatziki on it, add the steak and fresh vegetables, top with hot sauce, and serve.
