Mashed Sweet Plantains and Tofu Scramble

Ingredients

  • 1 plantain
  • Salt
  • 1 block extra firm tofu, drained and pressed
  • 2 teaspoons adobo seasoning
  • 1/2 teaspoon garlic powder
  • 1-2 tablespoons soy sauce
  • Bunch of cilantro (optional)
  • Mushrooms
  • Onion
  • Peas

Preparation

  1. Peel and quarter the plantain, then boil until fork tender.

  2. Mash the plantain and season with salt and some sautéed onions on top.

  3. Sauté mushrooms and onions until cooked down and softened.

  4. Add in tofu and seasonings and sauté to combine.

  5. Add soy sauce, peas, and cilantro, then cook until tofu is warmed through.

  6. Serve with whatever you like, and note that onions can be added to the tofu scramble as done today.
