Chili Garlic Chickpeas
Ingredients
- 1 cup chickpeas
- 1/2 medium onion, roughly chopped
- 1 red pepper, cut into strips
- 5 mushrooms, sliced
- bok choy, cut into smaller strips
- 1 tsp chili garlic sauce
- 1/4 tsp ginger powder
- 1/2 tsp garlic powder
- 1 tbsp soy sauce
- 2 tsp maple syrup ?
Preparation
Add mushrooms and onions to a pan set to medium heat
Allow veggies to cook and soften, about 2-3 minutes
Add garlic, ginger, chickpeas, peppers and bok choy and sauté until fragrant, about 2 minutes
Add soy sauce, chili sauce and maple syrup and stir to combine
Lower heat to low and allow some of the liquid to cook off, about 3-4 minutes
Stir to combine and serve as desired
Makes 2 filling portions
