Chili Garlic Chickpeas

Ingredients

  • 1 cup chickpeas
  • 1/2 medium onion, roughly chopped
  • 1 red pepper, cut into strips
  • 5 mushrooms, sliced
  • bok choy, cut into smaller strips
  • 1 tsp chili garlic sauce
  • 1/4 tsp ginger powder
  • 1/2 tsp garlic powder
  • 1 tbsp soy sauce
  • 2 tsp maple syrup ?

Preparation

  1. Add mushrooms and onions to a pan set to medium heat

  2. Allow veggies to cook and soften, about 2-3 minutes

  3. Add garlic, ginger, chickpeas, peppers and bok choy and sauté until fragrant, about 2 minutes

  4. Add soy sauce, chili sauce and maple syrup and stir to combine

  5. Lower heat to low and allow some of the liquid to cook off, about 3-4 minutes

  6. Stir to combine and serve as desired

  7. Makes 2 filling portions
