Hot Pepper Chickpeas

Ingredients

  • 1/2 cup sliced mushrooms
  • 1/2 small red onion
  • 1 small chinese eggplant, sliced
  • 1/2 a red bell pepper, roughly chopped
  • 1 tsp gochujang
  • 2 tsp tamari
  • 1 tsp maple syrup or sweetener of choice
  • 1/4 tsp garlic powder
  • 1/4 tsp mushroom powder

Preparation

  1. In a pan add onion and mushroom

  2. Allow to cook until onions are softened

  3. Add eggplant and sprinkle with seasonings, Sriracha and gochujang

  4. Stir to combine then add chickpeas and remaining veggies

  5. Add tamari and maple syrup

  6. Toss to combine and allow liquid to thicken before removing from stove top

  7. Serve as desired and add different veggies in

  8. I air fried some broccoli and tossed it into the bowl last minute

  9. Still super good
