Red Chili Stir Fry

Ingredients

  • 1 head of broccoli, cut into bite size pieces
  • 1/2 cup mushrooms, sliced
  • 1/4 red onion, diced
  • 1/2 tsp garlic
  • 1/4 tsp ground ginger
  • 1 tbsp soy sauce
  • 2 tsp maple syrup
  • 1 tsp apple cider vinegar
  • 1 tsp Gochujang (if you don’t have this you can try and replace with equal amount of sriracha or garlic chili sauce)
  • 2 tbsp water
  • Pinch of salt

Preparation

  1. Add onion and mushroom to a sauté pan and sprinkle with a tiny bit of salt

  2. Allow to saute and soften for 3 minutes

  3. Add in broccoli florets and water, stir and cover with a lid

  4. Allow to cook on a low-medium heat for 3-4 minutes until broccoli is a bright green

  5. Remove lid and add soy sauce, maple syrup, Gochujang, garlic powder, and ground ginger

  6. Stir to combine and cook until liquid is mostly absorbed

  7. Add vinegar, stir to combine and remove from heat

  8. Serve with rice, plant protein and extra Gochujang
