Harissa Red Lentils

Ingredients

  • harissa red lentils
  • 1/2 red onion, diced
  • 1/2 cup crushed tomatoes
  • 1 cup red lentils
  • 1 bell pepper (i used orange)
  • 3 cloves garlic, minced
  • 1/2 tsp cumin
  • 2 tsp harissa spice
  • 2 1/2 cups water
  • 2 tsp soy sauce or coconut aminos
  • 2 tsp maple syrup (optional)
  • Salt to taste

Preparation

  1. In a medium sauce pan add onion and sauté until softened

  2. Add in garlic and bell pepper and sauté until fragrant, 2 minutes

  3. Add in tomatoes, soy sauce and spices then stir to combine

  4. Add in lentils, maple syrup and water

  5. Bring to a boil then reduce to a simmer and allow to cook for about 20-25 minutes or until red lentils are cooked through and thick

  6. Adjust salt to your preference, stir and serve
