Harissa Red Lentils
Ingredients
- harissa red lentils
- 1/2 red onion, diced
- 1/2 cup crushed tomatoes
- 1 cup red lentils
- 1 bell pepper (i used orange)
- 3 cloves garlic, minced
- 1/2 tsp cumin
- 2 tsp harissa spice
- 2 1/2 cups water
- 2 tsp soy sauce or coconut aminos
- 2 tsp maple syrup (optional)
- Salt to taste
Preparation
In a medium sauce pan add onion and sauté until softened
Add in garlic and bell pepper and sauté until fragrant, 2 minutes
Add in tomatoes, soy sauce and spices then stir to combine
Add in lentils, maple syrup and water
Bring to a boil then reduce to a simmer and allow to cook for about 20-25 minutes or until red lentils are cooked through and thick
Adjust salt to your preference, stir and serve
