Quick Harissa Spiced Red Lentils Dish
Ingredients
- 1/2 red onion
- 1/2 cup crushed tomatoes
- 1 cup red lentils
- 1 bell pepper
- 3 cloves garlic
- 1/2 tsp cumin
- 2 tsp harissa spice
- 2 1/2 cups water
- 2 tsp soy sauce or coconut aminos
- 2 tsp maple syrup (optional)
- Salt to taste
Preparation
In a medium sauce pan add onion and sauté until softened.
Add in garlic and bell pepper and sauté until fragrant, 2 minutes.
Add in tomatoes, soy sauce and spices then stir to combine.
Add in lentils, maple syrup and water.
Bring to a boil then reduce to a simmer and allow to cook for about 20-25 minutes or until red lentils are cooked through and thick.
Adjust salt to your preference, stir and serve.
Pair with red rice, avocado, spring onion, and red chili flakes for extra heat.
