Spinach Tomato Chickpeas

Ingredients

  • 1 small red onion, diced
  • 2 tbsp tomato paste
  • 3 cloves garlic, minced
  • 1 can chickpeas, rinsed and drained
  • 1 tbsp maple syrup
  • 1 cup water
  • As much spinach as you can stand (shredded with your hands)
  • Salt and pepper to taste
  • Lemon wedges for serving

Preparation

  1. In a pan sauté onion until softened

  2. Add tomato paste and garlic and sauté for at least 2 minutes

  3. Add water, chickpeas and maple syrup

  4. Allow most of liquid to cook off, about 10-15 minutes

  5. Add In spinach and turn off heat, allow spinach to wilt with remaining heat from the food

  6. Add salt and pepper to taste and serve with lemon

  7. Squeeze lemon juice over top to get a nice bite of acid that compliments the dish very well

  8. So delicious! This served 2 hungry people
