Plant-based Shakshuka Comfort Food Mediterranean Style
Ingredients
- 1 can chickpeas, rinsed and drained
- 1 15 oz can fire roasted tomatoes
- 1 block of extra firm tofu, drained and pressed of water
- 1/2 red onion, sliced into strips
- 1 bell pepper
- 3 garlic cloves, roughly chopped
- 2 tbsp tomato paste
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp coriander
- 1 large bay leaf
- 1 cup water
- Juice of 1/2 a lemon
- 1 tbsp sweetener of choice (optional)
- Salt to taste
Preparation
In a large pan add onion and sauté until softened.
Add in garlic and bell pepper and allow to cook until garlic is fragrant.
Add diced tomatoes, tomato paste and remaining seasonings. Stir to allow seasoning to cook and become fragrant.
Add chickpeas, water and sweetener. Stir to combine and bring to a simmer.
Slice up tofu into 1/2 inch thick squares and sprinkle some salt on top.
Place tofu on top of the simmering sauce. With a spatula, gently press into mixture so broth basted the top of the tofu.
Allow mixture to simmer on low for about 15 minutes.
Remove from heat and squeeze lemon juice over top.
Serve with pita, rice or other side of your choosing.
