Chili Garlic Chickpeas

Ingredients

  • chili garlic chickpeas
  • 1 cup cooked chickpeas
  • 1/2 small red onion, diced
  • 2 cloves garlic, minced
  • 1/4 tsp ginger powder
  • 2 tsp soy sauce
  • 2 tsp maple syrup
  • 1 tsp chili garlic sauce
  • 1/4 cup water
  • 1/4 tsp cornstarch
  • 2 tsp sesame seeds
  • Veggies of choice: Chopped spinach
  • chopped bok choy and sliced mushrooms

Preparation

  1. In a pan set to medium heat on your stove top, add mushrooms and onions and sauté until softened, about 2-3 minutes

  2. Add bok choy, chickpeas, garlic, ginger, soy sauce, and maple syrup

  3. Cook until fragrant, about 3 minutes, then add water, garlic chili sauce and stir to combine

  4. Sprinkle cornstarch over top of the mixture and stir to combine, allowing mixture to thicken, about 2 minutes

  5. Remove from heat and stir in spinach and sesame seeds

  6. Allow spinach to wilt then serve as desired
