Stir Fried Chickpeas with Mushrooms and Onions

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 tsp soy sauce
  • 1 tsp gochujang
  • 2 tsp maple syrup
  • 2 tsp minced garlic
  • 3 basil leaves, minced
  • 1/2 a red onion, diced
  • 1/2 cup sliced mushrooms

Preparation

  1. Start by adding mushrooms and onions to a sauté pan. Cook until softened, about 3 minutes.

  2. Add in chickpeas, any additional veggies, gochujang, soy sauce, maple syrup and garlic.

  3. Sauté until liquid is absorbed and coating chickpeas.

  4. Remove from heat and add basil.

  5. Serve.
