Plant-Based Sweet Chili Chickpeas
Ingredients
- 1 cup cooked Chickpeas, rinsed and drained
- 2 tbsp soy sauce
- 2 tbsp sweet chili sauce
- 1/2 tsp minced garlic
- 1 tsp hot sauce
- 1 handful of spinach
- 2 mini bell peppers thinly sliced into rings
- 1/2 cup mushrooms, sliced
Preparation
In a small bowl combine soy sauce, minced garlic, sweet chili sauce and sesame seeds. Set sauce aside.
In a pan add in mushrooms and cook until most of water has evaporated.
Add in Chickpeas and allow to heat through for 2 minutes before adding sauce.
Stir to combine then add in spinach and bell pepper strips.
Once spinach wilts you can remove from heat and serve.
