Check Out These Sweet Chili Chickpeas

Ingredients

  • 1 cup cooked Chickpeas, rinsed and drained
  • 2 tbsp soy sauce
  • 2 tbsp sweet chili sauce
  • 1/2 tsp minced garlic
  • 1 tsp hot sauce
  • 1 handful of spinach
  • 2 mini bell peppers thinly sliced into rings
  • 1/2 cup mushrooms, sliced

Preparation

  1. In a small bowl combine soy sauce, minced garlic, sweet chili sauce and sesame seeds

  2. Set sauce aside

  3. In a pan add in mushrooms and cook until most of water has evaporated

  4. Add in Chickpeas and allow to heat through for 2 minutes before adding sauce

  5. Stir to combine then add in spinach and bell pepper strips

  6. Once spinach wilts you can remove from heat and serve
