Smoky Sweet Sautéed Chickpeas
Ingredients
- 1 can chickpeas, rinsed and drained
- 1 small red onion, diced
- 1/2 cup sliced mushrooms
- 5 Brussels sprouts, thinly sliced
- 1 bell pepper, roughly chopped
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp thyme
- 2 tsp tamari or regular soy sauce
- 2 tsp liquid sweetener like maple syrup
- Salt & Pepper to taste
Preparation
Add mushrooms and onions to a sauté pan and allow to cook and brown to soften, about 3 minutes
Add in chickpeas, Brussels sprouts and seasonings
Sauté, allowing Brussels sprouts to cook and start turning bright green in color
Add in bell pepper at this point along with tamari and maple syrup
Sauté together allowing flavor to infuse into the chickpeas and veggies
Once liquid has cooked off and veggies look evenly coated and caramelized, remove from heat
Serve immediately with rice, mashed avocado and some heat lime red pepper flakes if you prefer
