Mexican Quinoa with Chickpeas and Vegetables

Ingredients

  • red onion
  • peppers
  • mushrooms
  • 100g washed quinoa
  • a can of chickpeas
  • a can of chopped tomatoes
  • some sweetcorn
  • squeeze of tomato purée
  • a stock cube
  • smoked paprika
  • cumin
  • chilli
  • nooch

Preparation

  1. Cook red onion, peppers, and mushrooms.

  2. Add 100g washed quinoa, a can of chickpeas, a can of chopped tomatoes, and some sweetcorn to the pan.

  3. Add a squeeze of tomato purée, a stock cube, smoked paprika, cumin, chilli, and nooch.

  4. Cover the pan and cook until the quinoa is done.

  5. This recipe makes 4 portions, freezes well, and is cheap to make.
