Mexican Quinoa with Chickpeas and Vegetables
Ingredients
- red onion
- peppers
- mushrooms
- 100g washed quinoa
- a can of chickpeas
- a can of chopped tomatoes
- some sweetcorn
- squeeze of tomato purée
- a stock cube
- smoked paprika
- cumin
- chilli
- nooch
Preparation
Cook red onion, peppers, and mushrooms.
Add 100g washed quinoa, a can of chickpeas, a can of chopped tomatoes, and some sweetcorn to the pan.
Add a squeeze of tomato purée, a stock cube, smoked paprika, cumin, chilli, and nooch.
Cover the pan and cook until the quinoa is done.
This recipe makes 4 portions, freezes well, and is cheap to make.
