Spicy Buffalo Chickpea Tacos Filling

Ingredients

  • 1 can chickpeas, rinsed and drained
  • 3-4 tbsp Franks Red Hot Buffalo Sauce
  • 1/4 red onion, minced
  • 1/2 tsp dry basil
  • 1/2 tsp smoked paprika
  • 3 tbsp water
  • 1/8 tsp corn starch

Preparation

  1. Add all ingredients to a sauce pan at the same time and bring to a low simmer.

  2. Stir and allow to thicken, about 5 minutes.

  3. Set aside and assemble tacos.

  4. For taco assembly inspiration, use corn tortillas and stuff with spring mix, sauteed mushrooms, shredded brussel sprouts, avocado, extra minced red onion, and red pepper for extra heat. Feel free to use your own ingredients inside.
