Easy Gochujang Chickpea Stir Fry Dish
Ingredients
- 1 can chickpeas, rinsed and drained
- 1 tbsp gochujang*
- 2 tsp soy sauce
- 2 tsp sugar or maple syrup
- 1/2 cup water
- Pinch of cornstarch
- 1/2 small red onion
- 1/2 cup sliced mushrooms (optional)
- 1 inch fresh ginger minced or 1/2 tsp ground ginger powder
Preparation
In a pan add onion and mushrooms and sauté until softened, about 3 minutes.
Add in chickpeas and ginger and sauté until fragrant.
Add in gochujang, soy sauce, sweetener, and water and stir to fully combine.
Bring to a simmer and allow sauce to reduce for about 5-8 minutes.
Add in a pinch of cornstarch and stir.
Allow sauce to continue cooking and thicken for 1-2 minutes and remove from the stove to serve.
Tips
If you do not have gochujang available, you can substitute with Sriracha sauce or garlic chili sauce. Adjust soy sauce and sweetener to balance the spice.
