Curried Zucchini and Chickpeas with White Rice

Ingredients

  • white rice
  • zucchini
  • cherry tomatoes
  • 1 tablespoon red curry paste
  • soy milk
  • chickpeas
  • garlic powder
  • salt and pepper

Preparation

  1. Cook zucchini over medium heat for 5 minutes.

  2. Add cherry tomatoes.

  3. Add 1 tablespoon red curry paste and mix with 1 tablespoon soy milk to melt.

  4. Stir in chickpeas.

  5. Add a splash more soy milk to mix in the curry.

  6. Season with garlic powder, salt, and pepper.
