Curried Zucchini and Chickpeas with White Rice
Ingredients
- white rice
- zucchini
- cherry tomatoes
- 1 tablespoon red curry paste
- soy milk
- chickpeas
- garlic powder
- salt and pepper
Preparation
Cook zucchini over medium heat for 5 minutes.
Add cherry tomatoes.
Add 1 tablespoon red curry paste and mix with 1 tablespoon soy milk to melt.
Stir in chickpeas.
Add a splash more soy milk to mix in the curry.
Season with garlic powder, salt, and pepper.
