Chickpea and Vegetable Ital Stew

Ingredients

  • 2 cups chickpeas
  • 1 Irish potato
  • 1 large carrot
  • 1 cup chopped pumpkin
  • 1 onion, chopped
  • 4 cloves garlic
  • Chopped scallion
  • 1/2 teaspoon dried thyme leaves
  • Salt and pepper to taste
  • 1/2 cup coconut milk
  • Pinch of curry powder

Preparation

  1. Put the cooked chickpeas in a pot with a little water to cover.

  2. Add the diced potatoes and pumpkins.

  3. Add some of the garlic, scallion, and onions.

  4. Let it simmer until the potatoes and pumpkin are cooked. This should start to thicken it up.

  5. Add the coconut milk and a pinch of curry powder.

  6. Take a few large spoons of the stew and purée it in a food processor.

  7. Add the puréed mixture back to the pot.

  8. Add the seasonings to finish while it simmers on low.

  9. Add salt and pepper to taste.
