Chili Garlic Chickpeas
Ingredients
- 1 cup chickpeas
- 1/2 small red onion, diced
- 2 cloves garlic, minced
- 1/4 tsp ginger powder
- 2 tsp soy sauce
- 2 tsp maple syrup
- 1 tsp chili garlic sauce
- 1/4 cup water
- 1/4 tsp cornstarch
- 2 tsp sesame seeds
- Veggies of choice: I used broccoli cut into bite size pieces and sliced mushrooms
Preparation
In a pan set to medium heat on your stove top, add mushrooms and onions and sauté until softened, about 2-3 minutes
Add broccoli florets, chickpeas, garlic, ginger, soy sauce, and maple syrup
Cook until fragrant, about 3 minutes, then add water, garlic chili sauce and stir to combine
Sprinkle cornstarch over top of the mixture and stir to combine, allowing mixture to thicken, about 2 minutes
Remove from heat and stir in sesame seeds
Serve as desired
I chose to pair this with rice and avocado
