Chili Garlic Chickpeas

Ingredients

  • chili garlic chickpeas
  • 1 cup chickpeas
  • 1/2 small red onion, diced
  • 2 cloves garlic, minced
  • 1/4 tsp ginger powder
  • 2 tsp soy sauce
  • 2 tsp maple syrup
  • 1 tsp chili garlic sauce
  • 1/4 cup water
  • 1/4 tsp cornstarch
  • 1 tsp sesame seeds?

Preparation

  1. In a pan set to medium heat on your stove top, add onions and sauté until softened, about 2-3 minutes

  2. Add chickpeas, garlic, mushroom seasoning, ginger, soy sauce, and maple syrup

  3. Cook until fragrant, about 2-3 minutes, then add water, garlic chili sauce and stir to combine

  4. Sprinkle cornstarch over top of the mixture and stir to combine, allowing mixture to thicken, about 1-2 minutes

  5. Remove from heat and stir in sesame seeds

  6. Serve as desired

  7. I chose to pair this with rice, collards I cooked with some fresh garlic and soy sauce, cucumber, avocado and broccoli
