Quick Chickpea and Vegetable Stew
Ingredients
- 1 onion
- 1 red pepper
- 1 can of chickpeas
- 1 small sweet potato
- 1 tbs smoked paprika
- 1/2 tsp rosemary
- 1/2 tsp garlic powder or granules
- 1/2 tsp liquid smoke (optional)
- 1 tin of tomatoes
- 3 handfuls of spinach
- 1 cup of veggie stock
Preparation
Fry the red pepper, onion, and sweet potato in a pan for 5 minutes until lightly browned.
Add the chickpeas, tomatoes, stock, and spices.
Simmer for 20 minutes over low heat until thickened, then add spinach and fold in before serving.
Optional: Add cherry tomatoes at the end for extra flavor.
