Quick Chickpea and Vegetable Stew

Ingredients

  • 1 onion
  • 1 red pepper
  • 1 can of chickpeas
  • 1 small sweet potato
  • 1 tbs smoked paprika
  • 1/2 tsp rosemary
  • 1/2 tsp garlic powder or granules
  • 1/2 tsp liquid smoke (optional)
  • 1 tin of tomatoes
  • 3 handfuls of spinach
  • 1 cup of veggie stock

Preparation

  1. Fry the red pepper, onion, and sweet potato in a pan for 5 minutes until lightly browned.

  2. Add the chickpeas, tomatoes, stock, and spices.

  3. Simmer for 20 minutes over low heat until thickened, then add spinach and fold in before serving.

  4. Optional: Add cherry tomatoes at the end for extra flavor.
