Bean and Lentil Stew
Ingredients
- 1 medium onion
- 1 tin of chopped tomatoes
- 1 tsp garlic salt
- 1 tsp smoked paprika
- 1 tsp chilli powder
- 1 cup of dried red lentils
- 1 tin of black beans (or any beans)
- 1 cup of vegetable stock
- 1 tsp dried chilli flakes
- olive oil
Optional
- Toasted sourdough to serve
Preparation
Heat olive oil in a large pot over medium heat.
Add the chopped onion and sauté until softened, about 5 minutes.
Stir in the garlic salt, smoked paprika, chilli powder, and dried chilli flakes.
Add the chopped tomatoes, vegetable stock, dried red lentils, and black beans.
Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes until lentils are tender.
