Bean and Lentil Stew

Ingredients

  • 1 medium onion
  • 1 tin of chopped tomatoes
  • 1 tsp garlic salt
  • 1 tsp smoked paprika
  • 1 tsp chilli powder
  • 1 cup of dried red lentils
  • 1 tin of black beans (or any beans)
  • 1 cup of vegetable stock
  • 1 tsp dried chilli flakes
  • olive oil

Optional

  • Toasted sourdough to serve

Preparation

  1. Heat olive oil in a large pot over medium heat.

  2. Add the chopped onion and sauté until softened, about 5 minutes.

  3. Stir in the garlic salt, smoked paprika, chilli powder, and dried chilli flakes.

  4. Add the chopped tomatoes, vegetable stock, dried red lentils, and black beans.

  5. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes until lentils are tender.
