Vegan Lentil Stew on a Budget
Ingredients
- 1 tablespoon olive oil
- 1 white onion
- 60g tomato purée
- 1 teaspoon chilli flakes
- 1 teaspoon ground cardamom
- 1 teaspoon smoked paprika
- 1 teaspoon black pepper
- 3 medium carrots
- 1 liter vegetable stock
- 160g red lentils
- 1 teaspoon cornflour
- 1 teaspoon water
- 1 teaspoon salt
- juice of 1 lime
- 1 teaspoon sumac
- 140g fresh kale
Preparation
In a pan, add olive oil and onion, sauté until soft.
Add tomato purée, chilli flakes, cardamom, smoked paprika, and black pepper and combine.
Add carrots and combine.
Add the vegetable stock and bring to a boil.
Add the lentils.
Add the cornflour, stir, and let simmer for 30 minutes.
Add salt, lime juice, and sumac and stir before adding in the kale.
Cook until soft and serve in a bowl topped with more chilli flakes.
