Spicy Jackfruit and Roasted Vegetable Buddha Bowl

Ingredients

  • 1 tin jackfruit (approx 400g, drained)
  • 1 tin chopped tomatoes
  • 1 tin black beans (drained and rinsed)
  • 2 tablespoons tomato paste
  • 1 medium onion
  • 1.5 teaspoons chili powder
  • 2 teaspoons smoked paprika
  • Olive oil
  • Salt and pepper to taste
  • Broccoli
  • Carrots
  • Asparagus
  • Sweet potato

Preparation

  1. Heat olive oil over medium to high heat and cook onions for 2-3 minutes.

  2. Add jackfruit, beans, tomatoes and stir in the spices, then cook and stir occasionally for 10-12 minutes on medium heat.

  3. Cut favorite vegetables, drizzle with olive oil, salt and pepper, and roast in the oven for 30 minutes, adding greens after 10 minutes.

  4. Serve all components together and enjoy.
