Quick Chickpea Stew with Tahini and Spices
Ingredients
- 1 can chickpeas, rinsed and drained
- 1/2 red onion, chopped
- 1 cup sliced mushrooms
- 1/2 can tomato paste
- 2 tsp minced garlic
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 tbsp tamari
- 1/4 cup tahini
- 1/2 cup water
- Salt to taste
Preparation
Sauté onion and mushrooms until softened, about 2-3 minutes.
Add garlic, paprika, cumin, and tomato paste, stirring until fragrant, another 2 minutes.
Add chickpeas, tahini, tamari, and water. Stir to combine and heat through for about 5 minutes.
Adjust seasonings to your preference.
Serve with rice or plantains. Serves 2 hungry individuals or makes 3 normal servings.
