Quick Chickpea Stew with Tahini and Spices

Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1/2 red onion, chopped
  • 1 cup sliced mushrooms
  • 1/2 can tomato paste
  • 2 tsp minced garlic
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tbsp tamari
  • 1/4 cup tahini
  • 1/2 cup water
  • Salt to taste

Preparation

  1. Sauté onion and mushrooms until softened, about 2-3 minutes.

  2. Add garlic, paprika, cumin, and tomato paste, stirring until fragrant, another 2 minutes.

  3. Add chickpeas, tahini, tamari, and water. Stir to combine and heat through for about 5 minutes.

  4. Adjust seasonings to your preference.

  5. Serve with rice or plantains. Serves 2 hungry individuals or makes 3 normal servings.
