Easy Economical Eggplant Makmoura Dish
Ingredients
- 4 thin eggplants
- 4 tablespoons olive oil
- 1 large onion, sliced
- 1 green bell pepper, chopped
- 4 cloves garlic, sliced
- 4 medium tomatoes, chopped
- 1 tablespoon tomato paste
- 1 teaspoon salt
- 1/2 teaspoon cumin
- 1/2 teaspoon coriander
- 1/4 teaspoon black pepper
For frying
- Corn oil (as needed)
For serving
- Sumac
Preparation
Fry the eggplants in corn oil until browned and set aside
Heat olive oil in a pan and sauté onion, green bell pepper, and garlic until softened
Add chopped tomatoes, tomato paste, salt, cumin, coriander, and black pepper to the pan and cook until the sauce thickens
Incorporate the fried eggplants into the sauce and simmer for a few minutes to blend the flavors
Serve the dish sprinkled with sumac
