Rice Noodles with Thai-Inspired Peanut Sauce

Ingredients

Sauce

  • 1 massive dollop peanut butter
  • 3 tbsp tamari
  • 1 tsp gochujang (homemade)
  • 1 tsp kimchi sriracha
  • 1 tbsp sesame oil
  • 1/2 lime squeezed
  • 1 clove garlic

Noodles

  • Rice noodles
  • 1 shaved carrot
  • 1 green onion
  • 2 cloves garlic
  • handful spinach
  • 1/2 block roasted tofu
  • 1/2 red pepper
  • handful chopped cilantro
  • more lime juice

Preparation

  1. Cook rice noodles according to package instructions and set aside.

  2. In a bowl, mix all sauce ingredients until smooth and well combined.

  3. In a skillet, heat a bit of oil over medium heat and sauté garlic, carrot, green onion, red pepper, and tofu until vegetables are tender.

  4. Add spinach and cilantro to the skillet and cook until wilted.

  5. Stir in the cooked noodles and sauce mixture, heat through, and adjust with additional lime juice to taste.
