Creamy Zucchini Pesto Pasta
Ingredients
- 5 zucchinis
- 2 cups cherry tomatoes
Pesto sauce
- 1 avocado
- 1/2 cup nut of choice (pine nuts work best)
- 2 cloves garlic
- 1 handful cilantro
- 1 handful parsley
- 2 tbsp lime juice
- OPTIONAL: a dash of Himalayan salt, dash of black pepper ground
Preparation
Spiralize the zucchini.
Blend the pesto sauce in a high-speed blender.
Combine the zucchini and sauce, then top with diced cherry tomatoes.
