Creamy Zucchini Pesto Pasta

Ingredients

  • 5 zucchinis
  • 2 cups cherry tomatoes

Pesto sauce

  • 1 avocado
  • 1/2 cup nut of choice (pine nuts work best)
  • 2 cloves garlic
  • 1 handful cilantro
  • 1 handful parsley
  • 2 tbsp lime juice
  • OPTIONAL: a dash of Himalayan salt, dash of black pepper ground

Preparation

  1. Spiralize the zucchini.

  2. Blend the pesto sauce in a high-speed blender.

  3. Combine the zucchini and sauce, then top with diced cherry tomatoes.
