Easy Vegan Pesto Pasta
Ingredients
- 1/2 cup soaked cashews
- 1/2 cup soaked sunflower seeds
- 1/2 onion
- 2 cloves garlic
- 1/2 cup parsley
- 1/2 cup cilantro
- Veggie stock
- Juice of 1/2 lemon
- Salt and pepper
- Chilli flakes
- 1 tbsp olive oil
- 3 tbsp nutritional yeast
- Pasta of choice
- Mushrooms
- Vegan Parmesan
- Kale (optional)
Preparation
Blend all the ingredients together on high until smooth.
Mix the blend into cooked pasta of choice with sautéed mushrooms.
Top with vegan Parmesan and additional chilli flakes.
Optionally add kale for extra health benefits.
The entire process takes about 30 minutes and makes great leftovers.
