Crispy Pork Dumplings with Spicy Salsa

Ingredients

  • 1-2 teaspoons cooking oil
  • dumpling wrappers

Dumpling salsa

  • ginger
  • garlic
  • lots of scallion
  • Thai chili
  • chili oil
  • rice vinegar
  • soy sauce
  • sesame oil

Pork filling

  • ground pork shoulder
  • carrots
  • celery
  • Napa cabbage
  • scallion
  • ginger
  • sesame oil
  • low sodium soy sauce
  • ground pepper

Preparation

  1. Mix together all the dumpling salsa ingredients in a bowl and set aside.

  2. Combine all the pork filling ingredients in another bowl until well mixed.

  3. Assemble the dumplings by placing a portion of the filling in the center of each wrapper and sealing the edges.

  4. Heat the cooking oil in a non-stick skillet over medium heat and add the dumplings.

  5. Cook the dumplings for 15-30 seconds until they sizzle, then add 4-5 ounces of cold water.

  6. Cover the pan, reduce heat to medium-low, and cook until the water evaporates, about 11-13 minutes.

  7. Serve the dumplings with the spicy salsa.
